Pesto

 



When it comes to paleo-friendly sauces, pesto is a real winner. This flavorful and versatile sauce can be used in a variety of dishes, from zoodles to grilled chicken. Plus, it's super easy to make at home with just a few simple ingredients. Today, I'm going to share with you my go-to recipe for paleo pesto sauce.


Ingredients:


- 2 cups fresh basil leaves

- 1/2 cup raw cashews

- 2 cloves of garlic

- 1/4 cup extra virgin olive oil

- Salt and pepper to taste


Instructions:


1. Start by toasting the raw cashews in a dry skillet over medium heat for about 5-7 minutes, until they are golden brown and fragrant. Be sure to stir them frequently to prevent burning.

2. In a food processor, combine the toasted cashews, basil leaves, garlic cloves, and a pinch of salt and pepper. Pulse until the ingredients are roughly chopped.

3. With the food processor running, slowly drizzle in the olive oil until the mixture comes together and forms a smooth, creamy sauce. You may need to stop and scrape down the sides of the bowl as needed.

4. Taste the pesto and adjust the seasoning as needed, adding more salt and pepper to taste.

5. Store the pesto in an airtight container in the fridge for up to a week, or freeze it for longer storage.
